Terroir: Xavier Vignon's cuvée Lirac comes from 12 plots in Lirac, mainly on pebble and clay soils.
Vinification and aging: Fermentation at moderate temperature to promote the diffusion of aromatic compounds and not to extract them too much. Grenache and Syrah are co-fermented to gain aromatic complexity. 30% aging in barrels for 12 months, the rest in concrete vats to preserve the purity of the fruit.
Dense, with supple and crunchy tannins, this Lirac is a bomb of red fruits and sweet spices on the finish. Could age a few years, but is ready to drink now.
Food & wine pairings: Tagine of lamb with dried fruits - Duck breast with green pepper - Braised beef ribs
