One of Xavier Vignon's first creations. From co-panted vines among the oldest in Chateauneuf du Pape. The mystery of its precise assembly remains intact.
Blend: Impossible to give the exact blend of this cuvée which comes from “collection vines”, where many grape varieties are planted. Centennial Grenaches, but also Vaccarès, Counoise, Mourvèdre, Cinsault, Terret Noir and Muscardin.
Terroir : vines are located on the northern terroirs of Châteauneuf-du-Pape.
Vinification : A more than limited yield since three vines were needed for each bottle produced. Traditional vinification, with a long maceration of about a month. Aging for more than 15 months: 25% in French oak barrels (Allier –Tronçais), 25% in tuns, 25% in demi-muids, 25% in concrete vats. Very low dose of SO2 and light filtration.
Tasting : Intense nose of black fruits, blackberries and blackcurrants even black olives with roasted notes... The mouth is dense and ample, supported by present but silky tannins. An almost minty finish, all in freshness even saline... A great Chateauneuf-du-Pape, to drink now or to keep in the cellar for the next 15 years!
Food & wine pairings: Duck with olive sauce, Grilled pigeon, 7-hour lamb Strong cheeses (Maroilles, Livarot, etc.)
