Vinification: Manual harvest sorted and de-stemmed from 80 to 100%. Pre-fermentative cold maceration for 4 to 5 days. Fermentation and maceration for 15 to 20 days. Daily punching down and pumping over.

 

Ageing: In barrels, 28% of which are new, for 15 to 20 months. Bottling without filtration.

 

Tasting: The freshness and purity of the fruit combine with a structure evoking the elegance and finesse found in part in the wines of Vosne Romanée. Luscious and nuanced matter, quite sensual in the variation of its spicy chewiness.
